Oh breakfast. I hate breakfast. I have SUCH a hard time eating in the morning. Even when it isn’t first thing in the morning. Meaning I can wake up, shower, get ready for work (which takes between 30-45 minutes depending on what’s happening with my hair) and still not want to eat anything. I know how important that meal is, but I really have a hard time forcing that food down my throat. One way I’ve really helped myself is by forgetting about “typical” breakfast foods. I don’t like eggs very much, especially when you can taste them. Usually I will grab some leftovers from the night before and try to eat as much of that as possible. Once you get past the fact that you’re eating chicken salad or spaghetti squash pizza casserole at 9 am, it’s much more tolerable for me. I also love meal prepping with egg muffins because they are super quick to grab. Continue reading
I learned an interesting lesson this month. I have spent the last 18 months looking forward to certain dates, thinking those specific days would bring “the end” to a particular chapter of my life. Specifically, I was counting the days to a court date that I had looming over my head, a doctors appointment for my ankle that I had to wait 7 months for and a few other things. Continue reading
Back to back posts?! Insanity. I know you missed these recipes though!
I feel like I should clarify where my post from yesterday came from, because it was a little intense. I have mentioned before that I am not a nutritionist. I am not a Crossfit certified trainer. My degree is in public relations and I work for an alcohol distributor. My life does not revolve around fitness or nutrition. I am just someone who found Crossfit addicting and the paleo diet to be something that worked for me and my lifestyle. I have never claimed that paleo is the end all be all way of eating. For many people (myself included) it is just a loose guideline to follow. In fact, almost everyone that I am friends with who has asked me for a recipe is not paleo at all, they just want a new recipe to try. My kale chips might be served alongside a very non-paleo lasagna. I don’t really care. My goal isn’t to convert anyone to eating paleo. It’s to help make it easier on anyone who is trying to eat paleo, and share recipes with anyone else who might just be looking for a new way to make chicken salad. Continue reading
Confession: I am not a breakfast person. Unless it involves bacon. Or hash browns. But hash browns aren’t paleo (when using white potatoes), so I don’t get to eat them too often.
Confession 2: I am not a huge fan of eggs. I have no idea why. I used to like them, but the love has faded over the years. I will eat a hard boiled egg here or there, and if I put enough hot sauce on them I can usually stomach scrambled eggs. One type of egg that I do happen to love is quiche. It’s probably the French in me. Luckily, I have found, modified and perfected a paleo recipe for quiche, which I will be posting soon.
