Yup, you read the right: crack sauce. I am obsessed with making shredded chicken. Maybe because it means I can just put random crap in the crock pot and when I get home, dinner is ready. Maybe its because I really like shredded chicken. Whatever the reason, I make it at least once a week. Since I make it so often, I usually try to find different ways to spice it up or flavor it so we don’t get really sick of it. Confession: I didn’t use to eat very well. Actually, I just never thought about what I was putting into my body and more specifically how my body was reacting. I used to eat a lot of bread and pasta (although I think I blame that on being French) and it never made me feel good. Besides the fact that my digestive system didn’t love what I was eating, my whole body was sluggish and felt gross. Have you ever had one of those days where literally nothing goes your way? Today is that day for me. My day started at 5:40 am (WAY early for me) to do a pretty substantial favor for a family member. I agreed to do this favor based solely on the fact that I could get it done early and it wouldn’t interrupt my work day in any way, shape or form.

If you’ve ever looked for a completely paleo-friendly pizza recipe, you have to have come across meatza. Meatza is exactly what it sounds like – pizza made with meat as the crust. I have made this about 4,000 different ways now, but I think this one is my favorite. I’m not usually a huge fan of mixing salty and sweets, but the pineapple is just the perfect hint of sweet for me.
Some of the ingredients are going to be a little more complicated than I usually include- don’t freak out. I will include their non-paleo counterparts if you are in a pinch (or don’t care).
So, I had every intention of posting this recipe on Friday. As usual, life got in the way. I had product launches to attend for work all day Friday. That ended with me and a few co-workers going to another bar that one of my co-workers is a rep for. Before 5 pm. Luckily I had to drive home, so I took it way easy. Some of my co-workers were not so lucky. And then I went out to dinner with my boyfriends family, and by the time we got home there was nothing I wanted more than my bed. Continue reading
Holy crap. Not only are these good, they’re really cute and fun to eat and make. They’re absolutely perfect for lunch when you don’t want to just eat another Tupperware of some pre-made chicken salad.
Yup, you read that right. I am a Gamecock. I don’t have a picture for this recipe, so I’m using a picture that I took when I was back down at USC last fall for a football game. This was only the second time that I’ve been back since I graduated in December of 2010, and I wish I could go more. Like once a month more. But that’s really not realistic financially or socially. I have a life (and a job) here, so I just have to have way too much fun (and food) when I’m back down south, and recreate all of the good foods that remind me of the good old college days when I’m at home. My boyfriend isn’t a huge fan of my talking about college non-stop, especially about the amazing football team that USC has (something about me not playing football.. whatever) so I won’t go on and on about it.. But anyone who went to USC, or any college that you absolutely loved for that matter, will understand my sentiment.
I decided to make this my first post because this salad (minus the dressing) was my first real effort in eating paleo. I actually had this salad made for me every night when we first started Crossfit by my then-roommate Kirsten and I didn’t make it for myself until more than a year later.
