Oh breakfast. I hate breakfast. I have SUCH a hard time eating in the morning. Even when it isn’t first thing in the morning. Meaning I can wake up, shower, get ready for work (which takes between 30-45 minutes depending on what’s happening with my hair) and still not want to eat anything. I know how important that meal is, but I really have a hard time forcing that food down my throat. One way I’ve really helped myself is by forgetting about “typical” breakfast foods. I don’t like eggs very much, especially when you can taste them. Usually I will grab some leftovers from the night before and try to eat as much of that as possible. Once you get past the fact that you’re eating chicken salad or spaghetti squash pizza casserole at 9 am, it’s much more tolerable for me. I love Brussels sprouts. Like, could eat them daily love them. They are definitely something I didn’t learn to appreciate and love until I was well into my mid-twenties, but now that I know how to cook them, we will never stop eating them.
Luckily for me, TJ loves them just as much as I do, so we pretty much DO eat them daily. Luckily for both of us, they are incredibly good for you. Unluckily for both of us, I always made them the same way. As good as that recipe is. it can get kind of boring after a while. Finally, I decided to try out something different. I am constantly complaining about how there are not enough places in Annapolis for paleo people to eat. Well, on Friday night I returned to one that I haven’t been to in over a year and I am happy to say that it was just as good this time as it was the last time I ate there.
I went out for my moms birthday with my sister and a few of my aunts to Level in downtown Annapolis and I left dinner very satisfied. Level is an awesome restaurant that is huge on sourcing their food from local, sustainable resources whenever possible. It is a “small plates” type of restaurant, so we ordered about 8 plates for all of us to share. Continue reading
Yesterday the weather here was 68 and sunny. Then it got windy. Then it got a little rainy. Then the sun came back out. Then the winds and rain really came, and our power went out for the first time. While I was in the middle of cooking dinner. I’m talking pork loin raw in the oven, frozen butternut squash soup sitting on the stove. Everything in our house is electric, including the stove. That means panic basically set in for me. What will we eat for dinner? How will I make TJ’s lunch for tomorrow? So, I had every intention of posting this recipe on Friday. As usual, life got in the way. I had product launches to attend for work all day Friday. That ended with me and a few co-workers going to another bar that one of my co-workers is a rep for. Before 5 pm. Luckily I had to drive home, so I took it way easy. When I first started cooking paleo, I was scared/grossed out/intimidated by a lot of recipes. As far as Brussel Sprouts are concerned, I 100% blame my mom. She has always (and no matter how many times I make this for her, still does) hated Brussel Sprouts. She is also to blame for my aversion to fish, which I am still working on, and why I didn’t eat cooked carrots until college. Thanks mom!
